We didn’t think cinnamon rolls could get any better but Traeger proved us wrong once again. We usually cook all the meats on our Traeger but today we tried cinnamon rolls and they did not disappoint! We used two recipes and altered them to our liking!
* We did not have yeast and substituted with baking soda + Lemon juice mixture (None to be found at the store anywhere)

We used the Traeger recipe and Tastes of Lizzy T recipe!

Ingredients:

Dough:


1 cup warm milk

2 1/2 teaspoons Lemon juice

2 1/2 teaspoons baking soda

2 large eggs at room temperature

1/3 cup unsalted butter

4 1/2 cups all-purpose flour

2 teaspoon salt

1/2 cup granulated sugar

Filling:


1/2 cup unsalted butter

1 cup packed brown sugar

2 tablespoons cinnamon

1/2 cup heavy cream

Frosting:


8 ounces cream cheese (softened)

1/2 cup salted butter (softened)

3 cups powdered sugar

1/2 tablespoon vanilla extract

Steps:

  1. Pour warm milk in the bowl of a stand mixer
  2. Create your yeast mixture – Mix the baking soda + lemon juice together first, and then add it to the same bowl as the milk *if you have yeast, add two packets instead
  3. Add eggs, butter, salt and sugar
  4. Add 4 cups of the flour and mix using the mixer blade until the ingredients are a little combined. Let sit for 2 minutes
  5. Change your blade to the dough hook and mix on medium until it forms to dough. Add the rest of the 1/2 c flour if needed *should be formed into a ball that is tacky but still combined. If it sticks to the side of the bowl that is okay, don’t over add flour
  6. Since we used baking soda mixture substitute for yeast, this dough does not need to sit to rise.
  7. Put dough on gently floured surface while you prepare the filling
  8. In a medium bowl, combine the soft butter, brown sugar and cinnamon. Mix well and set aside while you roll the dough.
  9. Roll out the dough into a 24 x 15 rectangle with a rolling pin
  10. Use a rubber spatula to spread the filling evenly on the dough
  11. Cut the dough into strips. The size of your strips determines the size of your roll and how many. We cut into 8 strips.
  12. Roll the strips and place into a greased cast iron pan.
  13. Turn the Traeger to smoke to let it warm up and then turn to 325. *takes about 15 minutes.
  14. While the Traeger heats up, warm up the heavy Cream and pour over the top of the cinnamon rolls. *This is the secret ingredient that makes them ooey gooey goodness! Pour about 1/2 cup (depends on your roll size)
  15. Smoke on Traeger for about 30 minutes at 325. Check on them occasionally
  16. When they are done make the frosting as they cool.
  17. Whip cream cheese + butter together with a hand mixer. Once combined, add powdered sugar and vanilla. Mix again.
